So if you've ever met me, you probably know I'm a bit Harry Potter obsessed. I started reading the books when I was 7 and well, I've never stopped. I just keep rereading them over and over. Hubs and I have even slowly been reading them together out loud to eachother. So with yesterday being Harry's birthday (and coincidentally my first day off whole 30), I decided to make my own Butterbeer. I just kind of walked the aisles of the grocery store and tried to create it off of how I picture it tasting in my mind. I made it warm, but not hot like hot chocolate because I remember in the books, they would always grab Butterbeer off of the wall when they were ordered instead off out of a cooler or from a spout. So take this recipe with a grain of salt because it's just my interpretation :)
Ingrediedients
For the whipped cream topping:
1 cup whipping cream
3 tablespoons powdered sugar
2 tablespoons butterscotch pudding mix
For the Butterbeer:
4 cups milk
3 cups cream soda
1 packet butterscotch pudding mix (minus the 2 tablespoons you used for the whipped cream)
2 tablespoons cinnamon
2 sticks butter
Directions
Whipped cream:
Combine ingredients into an electric mixer and set on a medium speed for 5 or so minutes until it thickens. Homemade whipped cream is the best!
Butterbeer:
Combine all ingredients in a large pot and cook on medium heat, stirring constantly until it is all well blended. I didn't let mine boil because it wanted it more on the warm side, instead of hot. Top with an extra sprinkle of cinnamon.
