game day pumpkin chili



Ingredients:

1 tablespoon coconut oil, or olive oil
1 medium onion, diced
1 tablespoon garlic, minced
1 pound ground turkey
2 cans red kidney beans, strained
2 can a pureed pumpkin
1 can diced tomatoes
2 cups beef broth
1 beer
juice of 1 lemon or lime
3 tablespoons chili pepper
1 tablespoon cumin
1 tablespoon lemon pepper seasoning
1 bunch cilantro (optional)

Makes 8 servings


Sautéed onion snd garlic in coconut oil for 4-5 minutes, or until onion starts to turn translucent.Add ground turkey and begin to brown. Add tomatoes, beans and pumpkin and let sit on medium heat for around 10 minutes to let the flavors stew, stirring occasionally. Add remaining ingredients and let simmer for at least 20 minutes before serving. Adjust spices to taste. Top with cilantro.


I have a deep, sincere love for soup. Like, for real, if I had to eat one thing for the rest of my life it would be soup. For one, there are thousands of different types of soup. It's like it's its own food group. You can't just not like soup. There are too many kinds. Thick soup, thin soup, chunky soup, creamy soup, hot soup, cold soup...there's no way anyone could hate all of them. Secondly, soup is almost always cheap. You can throw a soup together with practically anything. It's great for the end of the week when you don't have enough of any one thing...so you just throw it all in a pot and call it a meal. Soup also makes great leftovers. It tastes exactly the same when reheated..you can't say that about many things! So with that said, you should made soup tonight. This soup. Except for this is chili. And according to Hubs, chili and soup are not the same thing at all. Soup can be chili, but chili can not be soup...make sense? Cool.
