Well, life is pretty fun lately. I don't know how else to describe it. I'm doing so many new things and I'm just having so much fun. I've just finished my first week in the kitchen at Windy Gap and it's a dream. It's just a dream. It's just as fun as being on Summer Staff except I get paid now and I get to do it all of the time. And there's a teenager in my house. Living there. Enjoying my food. That I get to pick up from school every day and pack a lunch for. And he teases me a lot. And we're mourning and we're celebrating and we're learning and sincerely, it is really, really fun.
In other news, I made some good chicken this week. Apparently I cook chicken a lot. I never noticed but then I was letting Marcel pick out what we would have for dinner off of the menu I'd planned and he pointed that almost everything I said was chicken, except meatloaf. Oh well. I made homemade french fries to go with these. Marcel isn't a fan of the sweet potato. They were the dank dank.
Cilantro-Lime Chicken Wings
Ingredients:
9 drumsticks
2 jalapeƱos, minced very finely
1 tablespoon minced garlic
3 tablespoons coconut aminos or soy sauce
1 cup chicken broth
2 tablespoons honey
1 bunch cilantro, shredded
1 tablespoon garlic salt
1 teaspoon cumin
1 tablespoon cayenne
1 tablespoon black pepper
Directions:
Combine all ingredients into a large bowl so that the chicken is mostly covered by liquid and let sit for at least 1 hour, up to over night. Preheat oven to 350 degrees. Pour entire contents, including the liquid onto a parchment covered sheet tray. Sprinkle some extra black pepper onto the chicken. Bake for 25-30 minutes or until chicken is cooked through.
Oven Baked Garlic-Dill French Fries
2 white potatoes, cut pretty thin
2 tablespoons coconut oil
1 tablespoon minced garlic
garlic salt
dill
Spread your potato out into a single layer onto a parchment covered sheet tray. Roll in coconut oil and garlic and sprinkle a light layer of garlic salt. Sprinkle your dill pretty liberally. Bake in 350 degree oven for around 30 minutes, flipping over every 5ish minutes
