paleo strawberry-rhubarb fruit roll ups



Ready for some paleo snacks?? These fruit roll ups take some time in the oven but are seriously worth it. Gatsby and I are embarking on our 15 hour road trip back to Dallas on Saturday for my sister's wedding (while Hubs takes kids to YoungLife camp) and I want some healthy snacks for the road. Roadtrip food usually equals McDonalds and gas station snacks but I'm determined to break that tradition. So here we go:

Ingredients:

1 pint strawberries
3 stalks of rhubarb
3 tablespoons honey



Chop em up

 

Puree them in a blender or food processor. Our Ninja is da bomb.


Pour in the honey


Cover a baking pan with parchment paper and spread evenly. You want it to be about 1/4 inch deep. Cook in the oven at 200 degrees for 2-3 hours. Mine took around 2 and a half but it will depend on how thickly it was spread. Do NOT switch it to broiler to try to quicken up the process. They will burn very quickly. This is probably common sense to most people but well..it wasn't to me. You will know it's ready when you can press your finger to it and it doesn't sink in. The edges may burn a bit since the middle will most likely be a little thicker but you can just cut trim it up.
