fall off the bone sweet and smoky ribs

Hello Whole 30 round 2! I can't believe I'm almost halfway done already. This time around has been easier than the first time around. I think because I've done it once before, I know that I can and it's not as hard to pass up on stuff. I'm also doing a WAY better job of prepping and cooking in advance. I think the best thing I'm doing this time around that I didn't do before is keeping veggies chopped. This saves me so much time in the morning making breakfast. PS: hubs caved today and ate  a fried chicken sandwich for lunch. Good try hubs.

So anywho, I've made this rib recipe twice and have it on the menu twice more this month because it's SO GOOD.


Marinade: 

1 cup apple cider vineger
1/4 cup liquid smoke (if you are doing Whole 30, make sure you find one that doesn't contain molasses! I found this one at an organic grocery store called Earthfare)
3-4 tablespoons Coconut Aminos (this is alot like soy sauce but soy is not on the Whole 30 approved list)
1/4 cup melted coconut oil or olive oil
juice of 1 large lemon
1/8 cup minced garlic
1 tablespoon garlic salt
lots of black pepper (just eyeball it)
a couple dashes of cinnamon

Makes approximately 4 servings.

Cut up 1 rack of ribs and let marinade for at least 30 minutes and continue to baste it consistently while grilling. I like to sprinkle more pepper on it when the ribs are almost done since most of it will roll off as you baste it. I only cooked half of our rack of ribs and froze the second half in the leftover marinade and made 2 dinners our of this 9$ rack of ribs. BOOM!
